90 Days in the Test Kitchen

We used the All-Clad D3 10-piece set as our primary cookware across all three cooking surfaces in our Boulder test kitchen: a 6-burner gas range, a portable induction cooktop, and a convection oven. Every piece was used at least weekly, with the 10-inch skillet and 3-quart saucepan seeing daily use.

At the end of 90 days, we ran thermal imaging on the 10-inch skillet to check for uneven heating, measured handle temperatures with an infrared thermometer, and checked all rivets and welds for loosening. Here's what we found.

Heat Distribution: Genuinely Excellent

The tri-ply construction (18/10 stainless exterior, aluminum core, 18/10 stainless cooking surface) delivers heat distribution that our thermal camera confirmed was within ±8°F across the entire cooking surface at medium heat — exceptionally consistent for a home-use pan. Cheap stainless sets routinely show 30–50°F variance at the same setting.

In practical terms, this means even browning on proteins, no burned corners, and consistent results whether you're on the center or edge of a gas burner.

Thermal imaging confirmed ±8°F variance across the cooking surface — well below the 30°F+ we've seen on budget stainless sets.

The Sticking Issue (And Why It's Not a Defect)

Stainless steel requires the correct technique to cook without sticking: preheat the pan until a water droplet beads and rolls (the Leidenfrost point), then add fat. Skip this step and food will stick. This catches new stainless users off-guard and generates many negative reviews — but it's user technique, not a product flaw. Once our testers mastered the preheat protocol, sticking was a non-issue.
